2 Tablespoons butter
1 small onion, finely chopped
2 c. long grain white rice
3 3/4 c. vegetable or chicken stock
1/4 c. fresh lime juice
2 teaspoons grated lime peel
chopped fresh parsley or cilantro (opt)
Melt butter in saucepan over medium heat. Add onion and saute until tender, about 10 minutes. Add rice and stir to coat. Add stock, lime juice and lime peel. Bring to boil, stirring occasionally. Reduce heat to low, cover and cook until tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand covered 5 minutes. Add salt and pepper to taste. Transfer to serving bowl and sprinkle with parsley or cilantro.
