Zucchini Bread

3 eggs
1 cup oil
2 cups sugar
2 tsp vanilla
2 cups grated zucchini
1/2 chopped nuts (optional)
3 cups flour
1 tsp soda
1/4 tsp baking powder
1 tsp salt
3 tsp cinnamon

Beat eggs until fluffy, beat in sugar, oil and vanilla. Beat until lemon colored and thick. Stir in zucchini and flour sifted with other ingredients. Add nuts. Pour into 4 small or 2 large loaf pans, greased and floured. (I've made them into muffins also)
Bake at 350* for 45 minutes, let loaves cool in pan 10 minutes then on racks.
